Vegan Flourless Banana Bread


This fluffy, vegan banana bread doesn't require any flour. As it is gluten-free and sugar-free, it's perfect for breakfast, for a Sunday brunch or as a snack.



Sunday morning. Have you ever experienced that annoying situation when you want to sleep a bit more, but you are so hungry that you wake up at 7 am? It happened to me. Several times. Too many times.


Going to bed the night before thinking, “Yeah! Tomorrow is Sunday, so I don’t have to wake up early, nor setting my alarm!”.


And then getting up at dawn, because my stomach is roaring and all I can think of is breakfast. Does anyone else relate to that?

That’s why I created this flourless, sugar-free, and gluten-free vegan banana bread. Perfect for these mornings in which you are hungry enough to run to the kitchen and bake something for breakfast, while still wearing your pyjamas.


I think I should call it Bananas in Pyjamas. What do you say?


Regardless of the name, this banana bread is very easy to make, which makes it great to be included on Sunday brunches or as a snack or breakfast throughout the week.


I love mine with a bit of nut butter, toasted walnuts, shredded coconut, and fresh fruit, but it would be delicious as well with some Nutella or vegan frosting.


Moreover, it uses plant-based, simple ingredients that are nutritious enough for powering your day.


So next time that your hunger wakes you up early on the weekend, enjoy your morning in pyjamas while having a slice (or two) of this fluffy banana bread.

Vegan Flourless Banana Bread


Ingredients

3 medium, ripe bananas 2 C oat flour 2 Tbsp granulated sweetener (such as coconut sugar, panela, erythritol, etc.) 1/4 C sunflower butter (or any nut/seed butter) 2 tsp baking powder 1 tsp baking soda 2 flax eggs (2 Tbsp ground flax seeds + 6 Tbsp water). Can sub for 2 regular eggs, if not vegan. 2 tsp apple cider vinegar 1 tsp vanilla extract 1 tsp cinnamon



Method


  1. Preheat your oven at 180ºC (325F). Prepare the flax egg by mixing the ground flax seeds and water. Stir it and set aside for at least 10 min.

  2. Mash bananas with a fork, until no chunks remain.

  3. In a bowl, mix all dry ingredients (oat flour, sweetener, baking powder, baking soda, cinnamon). Make sure there are no lumps.

  4. Add the bananas and flax eggs in, along with the vinegar and vanilla extract. Combine everything.

  5. Transfer to a greased baking dish and bake for 50 min, or until the top is golden brown and a toothpick comes out clean.

  6. Let it completely cool before slicing, or it will crumble. Enjoy with your toppings of choice!
